The treatment of nut and raisin mixes is complex but possible at Steripure. The sugar content of the fruits can lead to various issues, such as increased development of yeasts, moulds, and/or other microorganisms.

Our “perfect” saturated steam is neither wet nor dry. Its temperature can be adjusted between 85°C and 120°C depending on the level of contamination and product type, without altering the moisture content or water activity (AW).
What composition for your dried fruit mixes?
This treatment is currently applicable to mixes containing up to 30% raisins. Tests are ongoing to extend this capability to 40% raisin content.
